Orecchiette with turnip greens are one of the most famous dishes of Puglia and , in particular, from Bari. Turnip greens have a slightly bitter flavor that perfectly combines with the orecchiette and the spicy coming from the pepper.

  • 600gr of turnip greens
  • 400gr of orecchiette
  • 1 garlic clove
  • 1 fresh pepper
  • 4 anchovy fillets preserved in oil
  • grated pecorino cheese
  • extra virgin olive oil
  • salt

How to prepare it:

carefully wash the turnip greens to remove impurities, remove the stalk and coriaceous part. Then cut leaves into peaces. Boil water , add a spoon of salt and turnip greens. Blend everything and leave it boiling for about 8/10 minutes. Once cooked, dry turnip greens ( better with a colander). Put aside the turnip greens. Boil again the same water used to boil the turnip greens, the pasta has to be cooked. If the pasta is fresh , few minutes are enough. Be careful that pasta has to be al dente. While the pasta is cooking, fry the garlic in a large pan. Cut the pepper, remove seeds and cut it in thin slices. Cut the anchovy fillets in olive oil. Add pepper and anchovies to the garlic pan. Let them fry for a couple of minutes and add turnip greens. Let them set for a few minutes and make sure that everything is well-blended. Once the pasta is ready dry it and pour it to the large pan with the turnip greens. Let them cook for a couple of minutes. If you wish, you can add grated Pecorino cheese.
